How to Make Authentic Kashmiri Pink Tea

Kashmiri Pink Tea, also known as Noon Chai, is a traditional beverage from Kashmir, famous for its soothing flavor and pastel pink color. It’s perfect for chilly mornings or relaxing evenings.
Ingredients:
- Water: 4 cups
- Green tea leaves (or Kashmiri tea leaves): 2 tsp
- Baking soda: a pinch (helps develop the pink color)
- Milk: 1 cup
- Sugar: 2–3 tsp (adjust to taste)
- Crushed almonds or pistachios: for garnish
- Cardamom pods: 2–3 (optional, for flavor)
Preparation:
1.Boil the Tea Leaves:
In a saucepan, bring 4 cups of water to a boil. Add the green/Kashmiri tea leaves and a pinch of baking soda. Boil on medium heat for 10–15 minutes until the tea turns deep red/burgundy.
2.Whisk for Color:
Using a whisk or spoon, stir the tea vigorously. This helps develop the signature pink hue. Continue for a few minutes.
3.Add Milk and Sugar:
Pour in 1 cup milk and 2–3 tsp sugar. Reduce heat and let it simmer for 5–7 minutes. The color should shift to a lovely pink.
4.Flavor & Serve:
Optional: Add crushed cardamom for aroma. Pour into cups and garnish with crushed almonds or pistachios. Serve hot.
